
Kashmiri Pilaf Rice Recipe

Ingredients
- 1 ½ cup pulao basmathi rice
- ½ cup mixed dried fruit and nuts
- 3 tbsp ghee
- ½ cup whipped fresh cream
- Salt to taste
- ½ tsp sugar
Spices:
- 1 tbsp shahi jeera seeds
- 2 small bay leaves
- 4 pods of cardamom
- 4 cloves
- 1 inch cinnamon stick
- 1 ½ cup milk
Step by Step Instructions
- Thoroughly rinse rice under water and soak it for an hour. Later strain the rice and keep it aside.
- Take a bowl pour milk and cream and mix salt, sugar and stir it
- Preheat the wok, add ghee and once the ghee is hot add cumin and other listed spices
- Once the spices have started to crackle and splutter add uncooked rice and fry for 3 to 4 minutes
- Now add the mixture of milk and the cream along with ½ cup of water
- Bring it to a boil over medium -low heat and reduce to a simmer till the rice is cooked
- Mix with dried fruits and nuts- almonds, cashew, raisins and walnuts to add sweetness to the rice
- Now Garnish with your favorite fresh fruit and serve hot.
