Kashmiri Pilaf Rice Recipe

  • 1 ½ cup pulao basmathi rice
  • ½ cup mixed dried fruit and nuts
  • 3 tbsp ghee
  • ½ cup whipped fresh cream
  • Salt to taste
  • ½ tsp sugar


  • 1 tbsp shahi jeera seeds
  • 2 small bay leaves
  • 4 pods of cardamom
  • 4 cloves 
  • 1 inch cinnamon stick
  • 1 ½ cup milk


Step by Step Instructions

  • Thoroughly rinse rice under water and soak it for an hour. Later strain the rice and keep it aside.
  • Take a bowl pour milk and cream and mix salt, sugar and stir it
  • Preheat the wok, add ghee and once the ghee is hot add cumin and other listed spices
  • Once the spices have started to crackle and splutter add uncooked rice and fry for 3 to 4 minutes
  • Now add the mixture of milk and the cream along with ½ cup of water
  • Bring it to a boil over medium -low heat and reduce to a simmer till the rice is cooked
  • Mix with dried fruits and nuts- almonds, cashew, raisins and walnuts to add sweetness to the rice
  • Now Garnish with your favorite fresh fruit and serve hot.
