Ingredients

CHETTINAD CHICKEN CURRY:

  • 750 Gms chicken
  • 1/2 Tsp turmeric powder
  • Salt to taste
  • 2 tbsp Oil

CHETTINAD MASALA:

  • 3-4 Cardamom pods
  • 3 Tsp Coriander seeds
  • 1 Tsp Cumin seeds
  • 2 Tbsp Fennel seeds
  • 1 Tbsp Poppy seeds
  • 3-4 Cloves
  • 1 inch Cinnamon
  • 1 Tsp black peppercorns
  • 10-12 dry red chillies
  • 4-5 Sprigs of curry leaves.
  • Onion – 1 and 1/2 cup chopped
  • 1 Cup freshly grated coconut
  • 2 Tbsp ginger garlic paste

OTHER INGREDIENTS FOR THE GRAVY:

  • 3-4 Green chillies
  • 1/2 Tsp turmeric powder
  • 2 Tsp Red chili powder 
  • 1 and 1/2 Tomato finely chopped
  • 2 Tsp lemon juice
  • 3 Tbsp coriander leaves

Step by Step Instructions

  • Take a bowl clean the chicken, add turmeric powder,1 tsp lemon juice and salt to the chicken, combine well and set it aside for 1 hour.
  • On a low flame heat a pan add coriander seeds, grated coconut, cumin seeds, fennel seeds, poppy seeds, cloves, cinnamon, cardamom, black peppercorns and 8 – 10 dry red chilies.
  • Fry till slightly browned and when a nice aroma starts coming let it cool.
  • Blend the above mixture by adding few drops of water and keep it aside.
  • Heat a pan, add oil, once the oil is hot then add chopped onions, fry until golden brown, add ginger garlic paste tomatoes and let it cook until the oil begins to separate.
  • Now add the ground chettinad masala paste, curry leaves and fry for 5 mins.
  • Now add chicken mix well, add 1 cup of lukewarm water and cook till the chicken pieces become soft and tender, pour water as needed to get the gravy consistency,once the chicken looks tender you can sprinkle some 1 tsp lemon juice.
  • Serve hot with rice or roti.
